Panna Cotta (Oatmilk & Cinnamon)

    Bloom gelatin

    Sprinkle the 2 tsp powdered gelatin evenly over 3 tbsp cold water in a small bowl. Let sit 5–7 minutes until gelatin absorbs the water and appears swollen.

    Infuse oat milk with cinnamon

    In a medium saucepan, combine 3 cups oat milk, 1 cup heavy cream, 2 whole cinnamon sticks, 1 tbsp granulated sugar, 3 tbsp brown sugar, and a pinch of fine sea salt. Warm over medium heat until small bubbles form at the edges and steam rises, stirring occasionally to dissolve sugars. Do not boil; target about 180°F (82°C). Let infuse for 8–10 minutes off heat with the cinnamon sticks steeping.

    Remove cinnamon and add gelatin

    Remove and discard the cinnamon sticks. Add the bloomed gelatin to the warm oatmilk mixture and whisk until fully dissolved, about 1 minute. If gelatin does not dissolve, return pan to very low heat and stir gently until smooth (do not boil).

    Finish panna cotta base

    Stir in 1 tsp vanilla extract. Taste and adjust sweetness if needed (add up to 1 tsp more sugar). Let the mixture cool for 10 minutes at room temperature, stirring occasionally to prevent a skin from forming.

    Pour and set

    Divide the panna cotta mixture evenly among 6 small ramekins or serving glasses (approximately 5–6 oz / 150–180 ml each). Cover each with plastic wrap or a lid and refrigerate at least 4 hours, preferably overnight, until set and slightly jiggly.

Roasted Apples & Finish

    Prepare apples

    Preheat oven to 400°F (200°C). In a bowl, toss 2 peeled and cored apples cut into 1/2" wedges with 1 tbsp melted butter, 1 tbsp brown sugar, 1 tsp ground cinnamon, and 1 tsp lemon juice until evenly coated.

    Roast apples

    Arrange apple wedges in a single layer on a parchment-lined baking sheet. Roast for 15–20 minutes, turning once halfway, until apples are tender and edges caramelize. If pieces are large, roast up to 22 minutes. Remove from oven and drizzle with 1 tsp honey or maple syrup if using. Let cool to warm or room temperature.

    Assemble dessert

    When panna cottas are set, spoon 2–3 roasted apple wedges over each panna cotta. Sprinkle each serving with 1/3 tsp toasted chopped almonds or toasted oats for crunch (about 2 tsp total divided among 6 servings).

    Serve chilled panna cotta topped with warm or room-temperature roasted apples. If desired, garnish with a light dusting of ground cinnamon or a thin cinnamon stick per serving. Leftovers keep covered in the refrigerator 2–3 days; apples are best consumed within 24 hours.
