Hakka Noodles (desi Chow Mein) Recipe
Indo-Chinese flavored, contains fragrant basmati rice, fresh vegetables tossed in oil, soy sauce, and herbs. Optional additional toppings available. Served with hot! n sour soup.

Method
Noodles & Base
Boil water
Bring 3 liters of water to a rolling boil in a large pot. Add 1 tablespoon salt.
Cook noodles
Add the dried Hakka/chow mein noodles and cook according to package instructions until just al dente (usually 2–4 minutes). Stir occasionally to prevent sticking.
Shock & set aside
Immediately drain the noodles and rinse under cold running water to stop cooking and remove surface starch. Toss with 1 teaspoon oil to prevent sticking and set aside.
Cook rice (optional)
If using basmati rice as a fragrant garnish, cook 1 cup basmati according to package instructions (typically 1:1.5 rice:water by volume) and keep warm. This is optional and served alongside or underneath the noodles as described on the menu.
Vegetables & Aromatics
Fry aromatics
Add the minced garlic, julienned ginger, and slit green chili. Stir-fry for 10–15 seconds until aromatic but not browned.
Cook onions
Add the sliced onion and the white parts of the spring onions. Stir-fry for 30–45 seconds until they begin to soften.
Add vegetables
Add carrots and cabbage. Stir-fry on high heat for 1–2 minutes so they remain crisp-tender. Add capsicum and peas and continue tossing for another 30–45 seconds. Do not overcook — vegetables should keep a fresh crunch.
Sauces & Seasoning
Mix sauces
Create the sauce by combining 3 tablespoons light soy sauce, 1 teaspoon dark soy sauce (for color), 1 teaspoon vinegar, 1 teaspoon sugar, 1 teaspoon freshly ground white or black pepper, and 1 teaspoon green chili or Schezwan sauce if you want heat. Stir briefly to mix.
Toss with sauce
Pour the sauce evenly over the noodles and vegetables. Using tongs or two large spatulas, toss continuously and quickly for 1–2 minutes so sauce coats everything evenly and the noodles pick up color. Adjust salt to taste (note the soy sauce is salty), and add a splash of water if mixture seems dry.
Finish & aromatics
Finish with 1 teaspoon sesame oil and sprinkle the chopped green parts of the spring onions. Toss once more for 10 seconds to distribute aroma.
Plating & Garnish
Plate
Plate the Hakka noodles piping hot. If using basmati rice as the menu describes, either mound a small spoonful of warm cooked basmati to one side of the plate as a fragrant accent or serve rice in a separate bowl alongside the noodles.
Garnish
Top with optional fried shallots or garlic, chopped cilantro, a sprinkle of toasted sesame seeds, and a lime wedge. Offer additional toppings (crispy fried noodles/papad) on the side if desired.
Serve
Serve immediately with a bowl of hot and sour soup as an accompaniment, ensuring the noodles remain crisp and hot when served.
