Method
Dough
Activate yeast
In a small bowl, combine warm water (about 105–115°F / 40–46°C), sugar, and active dry yeast. Stir gently and let sit 5–8 minutes until foamy and fragrant.
Mix wet ingredients
In a large mixing bowl, whisk together yogurt, 2 tablespoons olive oil, and salt. Once the yeast is foamy, add it to the bowl and stir to combine.
Add flour and form dough
Add 3 to 3.5 cups of flour to the wet mixture. Stir with a wooden spoon or dough hook until a shaggy dough forms. If the dough feels very sticky, add up to 0.25 cup more flour a tablespoon at a time; it should be soft, slightly tacky but manageable.
Knead
Turn dough onto a lightly floured surface and knead by hand about 6–8 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes on medium speed.
Shaping & Par-bake (stone/oven)
Preheat and prepare stone/pan
If using a stone, place the pizza stone on the middle rack and preheat oven to 500°F (260°C) for at least 45 minutes. If using a baking sheet, preheat oven to 475°F (245°C). Lightly dust a peel or baking sheet with semolina or flour.
Divide dough
Punch down the risen dough and turn onto a lightly floured surface. Divide into 8 equal pieces for thick, fluffy breadsticks or 12 for thinner sticks. Shape each piece into a smooth ball and let rest 5 minutes under a towel to relax the gluten.
Shape sticks
Working one at a time, press or roll each ball into a 8–10 inch (20–25 cm) oval or rectangle, then fold or roll into 1–1.25 inch (2.5–3 cm) wide sticks about 6–8 inches (15–20 cm) long. Keep a little thickness in the center for a fluffy interior. Place sticks on the dusted peel or parchment if using a sheet, spaced about 1 inch apart.
Optional quick proof
If time allows, let shaped sticks rest 10–15 minutes under a towel to puff slightly. This short bench rest improves fluffiness but is optional if your oven is very hot.
Stone/oven roast
Slide the sticks onto the hot stone or place the baking sheet in the oven. Bake 5–8 minutes at 500°F (or 7–10 minutes at 475°F) until puffed and golden at edges with some darker blistering spots, rotating once halfway for even color. Baking time depends on thickness.
Toppings & Finish
Season and garnish
Sprinkle coarse sea salt and sesame seeds or crushed red pepper if using. Finish with chopped cilantro or parsley for a fresh note.
Keep warm between batches
If making multiple batches, keep finished breadsticks loosely tented with foil in a warm (not hot) oven at 200°F (95°C) to maintain softness while you bake the rest.
Dips & Serving
Warm dips
Warm marinara sauce gently on the stovetop or microwave to serving temperature (about 1–2 minutes in microwave). If serving ranch or tandoori yogurt dip, chill or leave at room temperature as preferred.
