    Take the picanha steak and score the fat in a crosshatch pattern, being careful not to cut into the meat. This will help render the fat and add flavor.

    Rub the steak with salt and black pepper on both sides. Let it sit at room temperature for at least 30 minutes to absorb the flavors.
