Start by crushing the pale, caramel, and pilsner malts together to create your grain bill. Make sure they are well mixed.

Malt Preparation

Heat 7 gallons of filtered water in a brew kettle until it reaches 165°F (74°C).

Boiling Water

Add the crushed grains to the heated water and maintain a temperature of 152°F (67°C) for 60 minutes to allow the enzymes to convert the starches into sugars.

Mashing the Grains

After mashing, sparge the grains with hot water to extract the sugars, collecting about 6 gallons of wort.

Sparging

Bring the wort to a boil, then add the Citra hops and Simcoe hops. Boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add the Mosaic hops and Amarillo hops for flavor and aroma.

After the boil, cool the wort quickly using a wort chiller until it reaches 70°F (21°C).

Cool the Wort

Once cooled, transfer the wort to a sanitized fermentation vessel and pitch the American Ale yeast. Seal the vessel with an airlock.

Pitch Yeast

Allow the beer to ferment for 2 weeks at a temperature of 68°F (20°C).

Fermentation Period

After fermentation, keg or bottle the beer, adding priming sugar if bottling to carbonate.
