This process creates a blend of flavors that are exclusive to each barrel, resulting in a very well-rounded rum that’s ideal for sipping neat.

Start by chopping the dried figs into small pieces to enhance their flavor release.

Split the vanilla bean lengthwise and scrape out the seeds. Combine the seeds and the pod with the chopped dried figs in a small saucepan.

Add the plum preserves to the saucepan with figs and vanilla. Pour in half a cup of water, and simmer on low heat for about 10 minutes, stirring occasionally, until the mixture thickens.

Simmer the Mixture

Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, refrigerate for at least 30 minutes to allow the flavors to meld.

Chill the Mixture

While the mixture is chilling, chop the roasted almonds coarsely and set aside.

Prepare the Almonds

In a serving dish, layer the chilled fig and vanilla mixture, then top with dark chocolate shavings and the chopped roasted almonds.
