Begin by heating 6 gallons of water to about 165°F (74°C).

Mashing the Grains

Add the Pale Malt and Caramel Malt to the heated water, maintaining a temperature of around 152°F (67°C) for 60 minutes.

After 60 minutes, raise the temperature to 170°F (77°C) for mash out.

Sparge the grains with enough hot water to collect approximately 6 gallons of wort.

Boiling the Wort

Once boiling, add the Citra Hops and boil for 15 minutes.

After 15 minutes, add the El Dorado Hops and boil for an additional 10 minutes.

Remove from heat and cool the wort quickly using a wort chiller or an ice bath.

Transfer the cooled wort to a sanitized fermentation vessel.

Fermentation

Pitch the yeast into the wort and seal the vessel with an airlock.

Allow it to ferment at 68-72°F (20-22°C) for about 1-2 weeks or until fermentation is complete.

Once fermentation is complete, dissolve the priming sugar in a small amount of boiled water and add it to the beer.

Bottling

Bottle the beer using sanitized bottles and caps.

Allow the bottles to carbonate at room temperature for about 1-2 weeks.

Carbonation and Aging

After carbonation, refrigerate the beer before serving.

Serve chilled in a glass and enjoy your balanced and smooth IPA with notes of pineapple and citrus!
