Select ripe Chardonnay grapes, ensuring they are free from any rot. Harvest approximately 10 kg of grapes.

Harvesting the Grapes

Crush the harvested grapes to release their juice. This can be done using a grape crusher or by hand. Collect the juice in a fermentation container.

Crushing the Grapes

Add 5 liters of water to the crushed grapes to help with fermentation and to dilute the must slightly.

Adding Water

Mix in 100 ml of olive brine into the grape mixture. This will impart a unique salty flavor to the wine.

Incorporating Olive Brine

Grate or finely chop 50 g of citrus zest (lemon or orange) and add it to the mixture. This will enhance the wine's aromatic profile.

Adding Citrus Zest

Sprinkle 10 g of yeast over the grape mixture. Stir gently to incorporate the yeast evenly throughout the must.

Cover the fermentation container with a clean cloth and allow it to ferment in a cool, dark place for about 7-14 days, stirring daily.

Fermentation

After fermentation is complete, press the mixture to separate the wine from the solids. Use a wine press or a fine mesh strainer.

Pressing the Mixture

Transfer the liquid wine into a clean fermentation vessel, leaving sediment behind. Seal the container with an airlock.

Racking the Wine

Allow the wine to age for at least 3 months in a cool, dark place to develop its flavors.

Aging

Once aged, carefully bottle the wine, ensuring no sediment is transferred. Seal the bottles with corks and label them.
