Carefully hand-pick the Cabernet Sauvignon, Malbec, and Sangiovese grapes during the harvest season to ensure they are ripe and free of damage.

Harvesting Grapes

In a clean and sanitized area, crush the grapes to release their juices. This can be done using a traditional wine press or by foot stomping, ensuring that the seeds remain intact to avoid bitterness.

Crushing Grapes

Transfer the crushed grapes (must) into a fermentation vessel. Add the wine yeast to the must, stirring gently to combine. Cover the vessel with a cloth to allow gases to escape while preventing contamination. Ferment for 7-14 days, monitoring the temperature and sugar levels.

Fermentation

After fermentation is complete, press the must to separate the liquid (wine) from the solids (pomace). Collect the wine in a clean container.

Pressing

Add the recommended amount of sulfites to the wine to prevent spoilage and oxidation. Stir gently to ensure even distribution.

Sulfite Addition

Transfer the wine to oak barrels or stainless steel tanks for aging. Allow the wine to age for at least 6 months, tasting periodically to assess its development.

Aging

Once aging is complete, filter the wine to remove any sediment, then bottle it in sterilized wine bottles. Seal with corks and label appropriately.

Bottling

Serve at room temperature to enjoy the rich plum notes and tannins. Pair with bold dishes or savor it on its own.
