“Kingston Dry” unfiltered cider from Champlain Orchards in Vermont / made from Kingston Black and other heirloom apples / super crisp & dry (6% ABV / 12oz can)

Wash and core the Kingston Black and heirloom apples. Cut them into small pieces to facilitate juicing.

Prepare the Apples

Using a cider press or juicer, extract the juice from the prepared apples. Collect the juice in a clean container.

Juicing the Apples

Dissolve one Campden tablet in a small amount of water and add it to the apple juice. This will help eliminate any unwanted bacteria and wild yeast.

Sterilize the Juice

Let the juice sit for 24 hours after adding the Campden tablet. Then, add the cider yeast to the juice and stir gently.

Fermentation Preparation

Transfer the juice to a fermentation vessel and seal it with an airlock. Allow it to ferment in a cool, dark place for about 2-4 weeks, checking periodically.

Ferment the Juice

Once fermentation is complete, siphon the cider into clean bottles, leaving some space at the top. If desired, add sugar for carbonation before sealing the bottles.

Bottling

Cap the bottles and let them sit at room temperature for another 1-2 weeks to carbonate. Then, refrigerate before serving.

Carbonation

Once chilled, pour the cider into a glass and enjoy the crisp, dry flavor of your homemade Kingston Dry cider.
