light and easy drinking beer from Cerveza Republica / brewed in Valencia, Spain (3.5% ABV / 12oz can)

In a large pot, heat 6 liters of water to approximately 165°F (74°C). Add 5 cups of Pilsner malt and 1 cup of rice to the pot, stirring gently to avoid clumping. Maintain the temperature between 150°F (65°C) and 155°F (68°C) for 60 minutes to allow the starches to convert to sugars.

Mashing

After mashing, strain the mixture using a fine mesh strainer or lauter tun to separate the liquid (wort) from the grains. Collect the wort in a clean pot, and if necessary, rinse the grains with hot water to extract more sugars.

Lautering

Bring the wort to a boil and add 1 oz of Saaz hops. Boil for 60 minutes, adding the remaining hops in the last 15 minutes of the boil for aroma.

Boiling

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle 1 tsp of Pilsner yeast on top. Seal the vessel with an airlock and let it ferment in a cool, dark place for about 2 weeks.

Fermentation

Once fermentation is complete, prepare a simple syrup with 3 oz of priming sugar and a cup of water, boiling until dissolved. Add this to the fermentation vessel and mix gently. Bottle the beer into sanitized bottles and cap them securely.

Bottling

Let the bottled beer condition at room temperature for another 1-2 weeks to develop carbonation. After conditioning, store the bottles in a cool place.

Conditioning

Chill the bottles in the refrigerator before serving. Pour into a glass and enjoy your homemade La Tuya Pilsner!
