Crab Cake Mixture
Combine wet ingredients
In a large bowl, whisk together 3 tablespoons mayonnaise, 1 beaten egg, 1 teaspoon fish sauce, 1 tablespoon lime juice, and 1 teaspoon Dijon mustard until smooth and slightly emulsified.
Add aromatics and crab
Stir the diced celery, diced onion, minced garlic, minced red chili, chopped cilantro, and sliced green onion into the mayonnaise mixture until evenly incorporated.
Fold in crab and binders
Gently fold in 1 1/4 cups picked blue crab meat and 3/4 cup panko breadcrumbs into the mixture. Use a light touch to keep crab lumps intact. Season with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. The mixture should hold together when pressed; if too loose, add up to 2 tablespoons more panko.
Form cakes
Divide the mixture into 8 equal portions (about 3 tablespoons each) and form into patties roughly 2.5–3 inches in diameter and about 3/4 inch thick. Place on a tray and chill in the refrigerator for at least 20 minutes to firm up, which helps prevent falling apart when frying.
Coating & Frying
Set up coating station
Place 1/2 cup flour in a shallow dish, the beaten egg (1) in another dish, and 3/4 cup panko breadcrumbs in a third dish. Lightly dust each chilled patty in flour, shaking off excess, dip into egg wash, then press into panko to coat evenly. Transfer to a plate and let rest 5 minutes so coating adheres.
Pan-fry the cakes
Heat 1/2 cup neutral oil in a large skillet over medium heat until shimmering but not smoking (about 325–350°F if using a thermometer). Add crab cakes in a single layer without crowding (work in batches if needed). Fry 3–4 minutes per side until golden brown and crisp, turning gently with a spatula. Adjust heat to prevent burning; the internal temperature should reach 145°F and cakes should be hot through.
Drain
Transfer cooked crab cakes to a wire rack set over a baking sheet or paper towel-lined plate to drain excess oil. Keep warm in a low oven (200°F/95°C) if cooking in batches.
Quick Dipping Sauce & Finish
Make dipping sauce
In a small bowl whisk together 3 tablespoons sweet chili sauce, 1 teaspoon soy sauce, 1 teaspoon lime juice, and 1 tablespoon chopped cilantro until combined. Taste and adjust lime or soy for brightness or salt.
Serve
Arrange 2 crab cakes per serving on plates and serve warm with the quick dipping sauce on the side. Garnish with extra cilantro sprigs and lime wedges if desired.
