Place white wine bottles (Sauvignon Blanc, Chardonnay, Pinot Grigio, Riesling) in a refrigerator for at least 2 hours before service or into an ice bucket filled halfway with ice and water for 20–30 minutes to reach 45–55°F (7–13°C). For Prosecco, chill to 40–46°F (4–8°C) — about 2–3 hours in refrigerator or 20–30 minutes in an ice bucket with ice and water.

Chill bottles

If using a bottle chiller sleeve, pre-chill it in the freezer and slide it on the bottle immediately before service to maintain temperature.

Check each bottle for intact seals and clean labels. Wipe any dust or condensation with a clean cloth. Remove foil capsule or loosen it with the knife on the corkscrew, cutting below the lip of the bottle and peeling away the capsule section.

Inspect bottle and foil

Use a corkscrew to remove the cork cleanly: center the worm in the cork, twist down until one spiral remains visible then lever out steadily. Wipe the bottle neck with the cloth to remove any residue. For screw-cap bottles, remove the cap and wipe the rim.

Open still whites (Sauvignon Blanc, Chardonnay, Pinot Grigio, Riesling)

Chill the Prosecco well. Remove the foil and loosen the wire cage while keeping your thumb over the cork. Hold the bottle at a 45° angle away from people and slowly twist the bottle (not the cork) while holding the cork to ease it out gently with a quiet pop. Wipe the rim.

Open Prosecco (sparkling)

For still whites: hold the glass by the stem and pour about 5–6 oz (150–180 ml) per glass, filling roughly one-third to one-half full to allow aromas to develop. For Prosecco: pour into a flute at an angle to preserve bubbles and fill 4–5 oz (120–150 ml). Use a steady pour and avoid splashing.

Service pour

If serving by the bottle at the table, present the bottle label to the guest for confirmation before pouring, then pour a small taste for the host to approve if customary.

Keep still whites in an ice bucket (ice + water) or wine chiller to maintain 45–55°F. For Prosecco, keep in an ice bucket to remain near 40–46°F. Replace ice water as needed.

Temperature adjustments during service

For Sauvignon Blanc or Riesling, offer a lemon slice or twist on the side — do not drop into the glass unless guest requests. For Prosecco, an orange twist or a small splash (about 30 ml) of sparkling water makes a light spritz. Note: avoid adding anything that will mask the wine’s character unless requested.

If the bottle is not finished, reinsert the cork or use a bottle stopper and refrigerate still whites. Opened still whites will keep 3–5 days in the refrigerator with a stopper; opened Prosecco will keep 1–3 days best if sealed and refrigerated, though effervescence will decline.

Serve wines in clean, odor-free glassware. After service, rinse glasses immediately and wash with warm water and mild detergent or in a dishwasher on a gentle cycle. Polish with a lint-free cloth for presentation.
