Prepare and cook chicken
Pat the chicken breasts dry and slice each breast in half horizontally to create thinner cutlets (about 4 thinner pieces total). Season both sides with 1 tsp kosher salt and 1 tsp black pepper. Heat 1 tbs olive oil in a large skillet over medium-high heat. When oil shimmers, add chicken pieces (do not overcrowd — cook in batches if needed). Cook 4–5 minutes per side until cooked through and internal temperature reaches 165°F (74°C). Remove chicken to a plate and let rest 5 minutes, then slice into 1/2-inch strips.
Assemble with cheese and vegetables
Arrange sliced cooked chicken on a serving platter or individual plates. Evenly distribute thinly sliced red and yellow/green bell peppers (1/2 cup each combined) and thinly sliced red onion over the warm chicken. Sprinkle 1 cup shredded mozzarella evenly across the chicken and vegetables.
Thai Peanut Sauce
Make the peanut sauce
In a medium bowl or small saucepan, combine 1/2 cup peanut butter, 1/2 cup coconut milk, 2 tbs soy sauce, 1 tbs fresh lime juice, 1 tsp brown sugar, 1 tsp fish sauce, 1/2 tsp grated fresh ginger, 1 minced garlic clove, and 1 tsp sriracha. Whisk or heat gently over low heat while stirring until smooth and warmed through, about 2–3 minutes. If the sauce is too thick, whisk in up to 2 tbs water, 1 tbs at a time, until it reaches a pourable but still coating consistency.
Dress the chicken with sauce
Spoon or drizzle desired amount of warm peanut sauce over the assembled chicken, cheese and peppers so the sauce coats the chicken and pools slightly under the cheese.
Finish & Garnish
Scatter 1/4 cup chopped roasted peanuts over the top. Drizzle 3 tbs sweet chili sauce in a thin zig-zag across the platter for sweet heat and shine. Top with 1/2 cup shredded carrots and 1 cup fresh bean sprouts. Optional: add additional chopped peanuts, extra lime wedges, or chopped cilantro to taste.
If serving hot and you want the cheese melted more, place the assembled platter briefly (2–3 minutes) under a broiler on high, watching closely until the mozzarella softens and just begins to bubble. Remove immediately, then add the fresh shredded carrots, bean sprouts and chopped peanuts so they remain crisp.
