Make the strawberry puree

Wash and hull the strawberries. Place 1 cup hulled strawberries into a blender with 1 tablespoon simple syrup (or honey syrup) and 1 teaspoon fresh lime juice. Puree until very smooth, about 20–30 seconds. If you prefer a silky texture, strain the puree through a fine mesh sieve into a bowl, pressing with a spoon to extract as much liquid as possible. Set aside (about 3–5 minutes).

Assemble the drink

Fill a tall glass or serving pitcher with about 1 cup of ice cubes. Pour 1 cup chilled pineapple juice over the ice. Spoon or pour the strained or unstrained strawberry puree over the pineapple juice (it will sit and create a layered look).

Top with ginger soda

Slowly pour 1 cup chilled ginger soda over the strawberry and pineapple layers. Pouring slowly helps keep some layering and carbonation. Gently stir once or twice with a bar spoon (lightly) to combine some of the layers while keeping a swirl.

Garnish and serve

Garnish with 1–2 mint sprigs and a pineapple wedge on the rim. Serve immediately with a straw. If making multiple servings in a pitcher, scale ingredients accordingly and add ginger soda just before serving to preserve fizz.
