Preparation
Set up tasting area
Select a quiet, well-lit area free of strong smells. Arrange one tasting glass (Glencairn or tulip) per whiskey, or reuse the same glass but rinse between samples. Place rocks glasses and ice to the side if guests prefer whiskey on the rocks.
Prepare water and cleansing items
Pour about 250 ml of room-temperature still water into a small pitcher or provide droppers so tasters can add small amounts to the whiskey. Provide a glass of plain water for palate cleansing between samples and a spit bucket or coaster if needed.
Tasting Method (per whiskey)
Pour
Pour 20–30 ml (a standard tasting measure) of the selected rye into a tasting glass.
Nose
Bring the glass to your nose and take short gentle sniffs, then a deeper inhale. Note aromas such as rye spice, caramel, vanilla, oak, dark fruit, citrus, chocolate, or baking spices. If an ethanol burn is strong, wait a moment then try again. Add a few drops of water (2–3 drops) to open the whiskey and re-nose to notice new layers.
Taste
Take a small sip and let it coat the tongue. Note the attack (initial flavors), mid-palate, and finish. Look for peppery/black pepper spice, baking spice, caramel, toffee, dried fruit, citrus, leather, tobacco, or smoky notes. Add a few drops of water if the spirit is closed or overly hot; note changes.
Finish and Evaluate
Observe the finish length and flavor development after swallowing or spitting. Record impressions on the tasting notes sheet: balance, complexity, intensity, favorite matches for cocktails or neat drinking, and ranking among the selection.
Service Suggestions
Neat
Serve 30–45 ml neat at room temperature in a rocks or Glencairn glass for full aroma and flavor expression.
With water
Offer a small pitcher or dropper of water so guests can experiment. Generally 1–3 drops or a few ml will open flavors without diluting too much.
On the rocks
For a cooler, softer profile, serve 30–45 ml over one large ice cube in a rocks glass. Allow one minute for slight dilution and re-evaluate aroma and flavor.
