Prepare glass
Select a copper mule mug or a highball glass (preferably chilled). Fill the mug/glass with crushed or cubed ice about three-quarters full to keep the drink cold and fizzy.
Build the drink
Add 2 fl oz vodka, 0.75 fl oz pomegranate liqueur, and 0.5 fl oz fresh lime juice into the ice-filled glass. If you like a slightly sweeter drink, add 0.25 fl oz simple syrup.
Top with ginger beer
Gently pour 4 fl oz of cold ginger beer over the back of a spoon or down the side of the glass to preserve carbonation and create a layered look. Stir gently once with a bar spoon (2–3 turns) to combine without flattening the ginger beer.
Finish
Taste briefly and adjust: add another 0.25 fl oz simple syrup for more sweetness, or 0.25 fl oz lime juice for more brightness. Give one gentle stir after adjustments.
Garnish & Serve
Garnish the drink with a lime wheel or wedge on the rim, scatter 1 tbsp pomegranate seeds into the top of the drink for color and texture, and tuck a mint sprig beside the lime if using. Serve immediately with a short straw or stirrer.
