Garlic Butter Sauce

Make sauce

Mince the garlic. In a small saucepan over low heat, melt 3 tbs unsalted butter with 1 tsp olive oil to prevent burning. Add the minced garlic and cook gently for 45–60 seconds until fragrant (do not brown). Stir in 1 tbs chopped parsley, 1 tsp salt and 1/2 tsp black pepper. Remove from heat and keep warm.

Prepare chicken

Pat the 2 chicken breasts dry. If breasts are thick, slice horizontally to make 2 thinner cutlets or pound to an even thickness about 1/2 inch. Season both sides with 1/2 tsp salt, 1/4 tsp black pepper and 1/2 tsp paprika.

Cook chicken

Heat 1 tbs olive oil in a large skillet over medium-high heat. When oil shimmers, add the chicken cutlets and cook 4–5 minutes per side (depending on thickness) until golden and cooked through (internal temperature 165°F / 74°C). Reduce heat if exterior browns too quickly. Transfer chicken to a plate and let rest 3 minutes. Brush both sides lightly with 2–3 tbs of the prepared garlic butter sauce.

Preheat and assemble

Preheat your oven to broil (or 450°F / 230°C if using high heat baking). Place the brushed chicken on an oven-safe baking sheet or skillet. Evenly distribute 1 cup shredded mozzarella and 1/2 cup shredded cheddar over the chicken breasts.

Broil to melt cheese

Place the baking sheet on the top rack under the broiler about 4–6 inches from the element. Broil for 2–4 minutes until cheese is melted and bubbly and lightly golden. Watch closely to avoid burning. Alternatively, bake at 450°F for 5–7 minutes.

Add bacon and vegetables

Remove from oven. Immediately sprinkle the 6 chopped bacon slices over the melted cheese, then scatter 1/2 cup diced tomatoes and 1/4 cup finely diced red onion across the chicken. Drizzle the remaining garlic butter sauce (if any) over the toppings for extra flavor.

Finish with ranch

Drizzle 1/3 cup ranch dressing over each breast (or divide evenly). If desired, return to the oven for 30–60 seconds to warm the ranch slightly, but typically the ranch is served cold or room temperature.

Serve

Garnish with 1 tbs chopped chives or parsley and a lemon wedge on the side. Serve hot with your choice of sides.
