Dissolve sugar

Place the turbinado sugar in an Old Fashioned (rocks) glass. Add the teaspoon of water and three dashes of Angostura bitters directly onto the sugar. Use a muddler or the back of a bar spoon to press and grind the sugar until it is mostly dissolved and forms a thick, aromatic paste on the bottom of the glass.

Add bourbon

Pour 2 oz of bourbon over the sugar-bitters paste. Give the mixture a gentle stir with a bar spoon for about 10–15 seconds to combine and slightly chill.

Add ice and finish

Add a single large ice cube (or 2–3 large ice chunks) to the glass. Stir gently for another 10–15 seconds to properly chill and dilute the cocktail (about 15–20 total seconds of stirring).

Garnish and serve

Express the oil from the orange peel: hold the peel over the glass with the colored side facing down and give it a firm twist to spray the oils onto the surface of the drink, then rub the peel around the rim and drop it into the glass. Place one Luxardo or maraschino cherry on a pick and rest it in the drink (or drop it in). Serve immediately.
