Method

In a small bowl combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, hot sauce (if using), salt, and black pepper. Stir until smooth. Taste and adjust seasoning. Refrigerate while preparing burgers so flavors meld (at least 10 minutes).

Form Patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 inch thick and slightly wider than the buns. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Season
Sprinkle kosher salt and freshly ground black pepper evenly on both sides of each patty. Lightly brush or sprinkle Worcestershire sauce on one side of each patty for extra savory flavor.
Preheat Cooking Surface
Preheat a cast-iron skillet or heavy griddle over medium-high heat until hot, about 3–5 minutes. Add 1 tablespoon neutral oil and spread to coat. The surface should shimmer but not smoke heavily.
Cook Patties
Place the patties on the hot surface, seasoned-side down. Cook undisturbed for 3–4 minutes to develop a good sear. Flip once and cook 2–3 minutes for medium doneness (internal temp ~140–145°F / 60–63°C). In the last 30–45 seconds of cooking, lay a slice of cheddar on each patty and cover the pan briefly with a lid or foil to melt the cheese.
Remove patties to a plate and let rest for 2–3 minutes while you toast the buns and assemble. Resting redistributes juices and prevents the bun from getting soggy.
Buns & Finish
To assemble each burger: spread about 1 to 1 1/2 tablespoons of Alehouse Sauce on the bottom bun. Place a lettuce leaf, then the cheese-topped patty. Add tomato slices, red onion, and dill pickle slices. Spread a little sauce on the top bun and close the burger.
Serve immediately with fries, onion rings, or your preferred side.
