Prepare the Corn

Soak the corn in water for at least 8 hours or overnight. Drain and rinse.

Mash the Corn

In a large pot, combine the soaked corn and 4 cups of water. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.

Add Anise and Sugar

After simmering, add the anise seeds and sugar to the pot. Stir well to dissolve the sugar.

Cool the Mixture

Remove the pot from heat and let the mixture cool to room temperature.

Add Yeast

Once cooled, sprinkle the yeast over the mixture and stir gently to combine.

Fermentation

Cover the pot with a cloth and let it sit in a warm place for 5-7 days, stirring once a day. You should see bubbles forming.

Distillation

After fermentation, strain the liquid through a fine mesh sieve or cheesecloth into a distillation apparatus. Distill the liquid to separate the alcohol.

Bottle and Age

Bottle the distilled liquor and let it age for at least 2 weeks to develop the flavors.
