Prepare the Chiles
Roast the ancho and poblano chiles over an open flame or in a broiler until charred. Once charred, place them in a sealed plastic bag for 10 minutes to steam, then peel off the skins and remove the seeds.
Strain the Mixture
After 2 weeks, strain the mixture through a fine mesh sieve or cheesecloth into a clean container, discarding the solids.
Sweeten the Liquor
Add the agave syrup and water to the strained liquid, stirring well to combine. Taste and adjust sweetness if necessary.
Bottle and Enjoy
Transfer the final mixture into a clean bottle, seal it, and store in the refrigerator. Serve chilled or at room temperature.
