Slice and toast bread

Preheat the oven to 400°F (200°C). Slice the baguette on a diagonal into 12 slices about 1/2-inch thick. Arrange slices in a single layer on a baking sheet.

Brush the top of each slice lightly with 2 tablespoons olive oil. Toast in the preheated oven 6–8 minutes until golden and crisp at the edges. Remove from oven.

While still warm, rub the cut side of a garlic clove over each toast slice to impart a subtle garlic flavor. Reserve remaining oil for brushing the cheese if desired.

Prepare cheeses

Tear or roughly chop the fresh mozzarella into small pieces so it mixes easily. Place the mozzarella, softened cream cheese, ricotta (if using), and grated Parmesan in a medium bowl.

Add chopped basil, lemon zest, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Use a fork or rubber spatula to mash and fold until mixture is creamy with small mozzarella strands remaining—do not purée fully; you want some texture. If mixture seems too stiff, mix in the reserved 1 tablespoon olive oil, 1 teaspoon at a time, until spreadable.

Taste and adjust seasoning with more salt, pepper, or lemon zest as desired.

Prepare tomato topping

Place the halved cherry tomatoes in a small bowl. Toss with the remaining 1 tablespoon olive oil, a pinch of salt (about 1/8 tsp), and crushed red pepper flakes. This lightly seasons the tomatoes and brings out their juices.

Assemble the bruschetta by spreading about 1 to 1½ tablespoons of the cheese mixture onto each toasted slice, leaving a small border. Top each with 2–3 halved tomatoes (or a spoonful of the tomato mix).

Drizzle each assembled bruschetta with a small amount of balsamic glaze (about 1/4 teaspoon per piece) or use more to taste. Garnish with whole fresh basil leaves or chiffonade for color.

Serve immediately so toasts remain crisp. If preparing slightly ahead, store the toasted bread and cheese mixture separately; assemble just before serving.
