    Rinse the rice under cold water until the water runs mostly clear (3–5 rinses). Drain and place the rice in a rice cooker or pot. Add water following your rice cooker’s recommended ratio (approx. 1:1.5 rice to water by weight). Let soak 20–30 minutes if time allows, then cook according to your rice cooker or bring to a boil on the stove, reduce to low, cover, and simmer 12–15 minutes. Let rest covered 10 minutes before fluffing.

Beef & Simmer Sauce

    Prepare ingredients

    Peel the onion and cut it in half from pole to pole. Slice each half into thin half-moons about 3–4 mm thick. If your beef is in large pieces, separate and gently tear or slice into bite-sized strips (about 2–3 cm wide). If using frozen beef, defrost in the refrigerator or briefly under cold running water and pat dry.

    Make the simmer base

    In a wide skillet or shallow saucepan, combine the dashi, soy sauce, mirin, sake, sugar, and sliced ginger. Stir to dissolve the sugar and bring the mixture to a gentle simmer over medium heat.

    Cook the onions

    Add the sliced onions to the simmering sauce. Cook, stirring occasionally, until the onions are soft and translucent, about 6–8 minutes. The goal is tender, slightly sweet onions that have absorbed some sauce flavor.

    Simmer the beef

    Increase heat slightly so the liquid returns to a gentle simmer. Add the beef in a single layer as much as will comfortably fit; it will shrink and release juices. Stir to separate the slices and ensure they are submerged in the simmer sauce. Cook just until the beef changes color and is tender, 2–4 minutes for well-sliced thin beef. If necessary, cook in two batches to avoid overcrowding. Taste and adjust seasoning: add a little more soy or a pinch of sugar if needed.

    Finish

    Reduce heat to low and let the beef and onions sit in the sauce for another 1–2 minutes so flavors meld. Turn off the heat and remove the ginger slices if you prefer not to serve them. Keep warm until ready to serve.

Assemble & Serve

    Divide the cooked rice among 4 bowls (approximately 150–180 g cooked rice per bowl). Using a slotted spoon or tongs, transfer beef and onions with a little sauce on top of each bowl of rice. Avoid too much liquid in the bowl — spoon some sauce over rice but leave excess in the pan if desired.

    Top each bowl with a small mound of beni shoga, a sprinkle of sliced scallions, and toasted sesame seeds if using. Add an onsen tamago or soft-cooked egg on top if desired. Finish with a light dusting of shichimi togarashi for heat if you like.

    Serve immediately while hot. Mix the egg into the beef and rice at the table if using, and enjoy.
