Prepare the Shrimp
Rinse the large shrimp under cold water and pat them dry with paper towels. Set aside.

Mix the Batter
In a large mixing bowl, combine the all-purpose flour, shredded coconut, cornstarch, baking powder, and salt. Mix well.
Frying the Shrimp
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Shrimp
Dip each shrimp into the coconut batter, ensuring it is fully coated.
Fry the Shrimp
Carefully place the coated shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes, or until golden brown and crispy.
Drain and Serve
Using a slotted spoon, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
