Carefully harvest the Pinot Noir grapes from the vineyard, ensuring only the ripest fruit is selected. Remove any stems and leaves.

Harvesting the Grapes

Crush the grapes and destem them to separate the skins and seeds from the juice. This can be done using a wine press or by hand.

Crushing and Destemming

Transfer the crushed grapes into a fermentation vessel. Add the yeast and tannin powder, gently mixing to combine. Cover the vessel and allow fermentation to occur for 7-10 days at a consistent temperature of around 70-75°F (21-24°C).

Fermentation

Once fermentation is complete, press the mixture to separate the liquid wine from the solid grape skins and seeds. Transfer the liquid to a clean fermentation vessel.

Pressing

Add oak chips to the wine for additional flavor. Seal the vessel and let the wine age for at least 6 months in a cool, dark place.

Aging

After aging, add sulfites to stabilize the wine. Carefully transfer the wine into clean bottles, cork them, and store them on their sides. Allow the wine to rest for an additional 2-3 months before serving.
