Prepare the Vegetables
Preheat the oven to 400°F (200°C). Slice the yellow squash into rounds and cut the onion into wedges. Toss the cherry tomatoes, yellow squash, and onion in a bowl with 2 tablespoons of olive oil, salt, and black pepper.
Roast the Vegetables
Spread the vegetables on a baking sheet and roast in the preheated oven for about 20 minutes, or until tender and slightly charred.
Prepare the Salmon
While the vegetables roast, season the Faroe Island salmon fillets with the remaining tablespoon of olive oil, salt, and black pepper. Squeeze the juice of half a lemon over the salmon.
Cook the Salmon
Heat a non-stick skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for about 4-5 minutes on each side, or until cooked through and flaky.
Serve
Plate the charred vegetables alongside the salmon. Serve with a generous dollop of baba ghanoush and garnish with lemon wedges.
