Preparation Steps
Roast the Beets
Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast in the oven for about 45-60 minutes, or until they are tender when pierced with a fork. Allow them to cool, then peel and cut into bite-sized pieces.
Prepare Goat Cheese Mousse
In a mixing bowl, combine the goat cheese and heavy cream. Use a hand mixer or whisk to blend until smooth and creamy. Add a pinch of salt and mix well.
Prepare Peaches
Slice the fresh peaches into wedges or cubes, and toss them with a bit of olive oil and a sprinkle of salt.
Assemble the Dish
On a serving platter, arrange the roasted beets and top them with the peach slices. Add dollops of the goat cheese mousse on top, then sprinkle with smoked black pepper and fresh basil leaves for garnish.
Chill and Serve
Cover and chill the dish in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
