Steak Preparation

Season the Steak

Rub the Black Angus NY strip steaks with olive oil, salt, black pepper, and garlic powder. Let them sit at room temperature for 30 minutes.

Cook the Steak

Preheat a grill or skillet over high heat. Cook the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before serving.

Roasted Heirloom Cauliflower

Prepare the Cauliflower

Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and place them on a baking sheet.

Season and Roast

Drizzle with olive oil, salt, black pepper, and paprika. Toss to coat evenly and roast for 25-30 minutes, until tender and golden.

Hasselback Fingerlings

Prepare the Potatoes

Preheat the oven to 425°F (220°C). Cut slits into the fingerling potatoes, being careful not to cut all the way through.

Season and Roast

Place the potatoes on a baking sheet, drizzle with olive oil, sprinkle with salt and rosemary. Roast for 30-35 minutes until crispy and tender.

Romesco Sauce

Blend the Sauce

In a food processor, combine roasted red peppers, almonds, garlic, olive oil, red wine vinegar, smoked paprika, and salt. Blend until smooth.
