Vanilla Bean Ice Cream

Vanilla Bean Ice Cream

Prepare the Base

In a saucepan, combine heavy cream, whole milk, and sugar. Split the vanilla bean, scrape the seeds into the mixture, and add the pod. Heat over medium heat until sugar dissolves and mixture is hot, but not boiling.

Temper the Egg Yolks

In a bowl, whisk the egg yolks. Gradually pour in about a cup of the hot cream mixture, whisking constantly to temper the yolks. Then pour the tempered yolks back into the saucepan.

Cook the Mixture

Cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and strain into a bowl. Chill in the refrigerator for at least 4 hours or overnight.

Churn and Freeze

Churn in an ice cream maker according to manufacturer's instructions. Freeze until firm.

Blend Ingredients

In a blender, combine coconut milk, sugar, lime juice, lime zest, and salt. Blend until smooth.

Chill the Mixture

Transfer the mixture to a bowl and chill in the refrigerator for at least 2 hours.

Churn and Freeze

Churn in an ice cream maker according to manufacturer's instructions. Freeze until firm.

Black Cherry Sorbet

Make Cherry Syrup

In a saucepan, combine black cherries, sugar, and water. Cook over medium heat, stirring occasionally until cherries are soft and syrupy, about 15 minutes.

Blend and Strain

Remove from heat, add lemon juice, and let cool. Blend until smooth and strain through a fine sieve to remove solids.

Chill and Freeze

Chill the mixture in the refrigerator for 2 hours, then churn in an ice cream maker according to manufacturer's instructions. Freeze until firm.
