Method
Cooking the Rice
Cook Basmati Rice
Rinse the basmati rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is fluffy. Remove from heat and let it sit covered for an additional 5 minutes.
Preparing the Seafood
Cook Halibut and Prawns
In a skillet over medium heat, add a splash of oil. Season the halibut fillet with salt and pepper. Place it in the skillet and cook for about 4-5 minutes on each side until it flakes easily with a fork. Add the jumbo prawns, cooking them for about 2-3 minutes until they turn pink and opaque.
Making the Sauce
Prepare the Spicy Black Bean Sauce
In a small saucepan, heat the black bean sauce over medium heat. Stir in the cashews and let it simmer for 2-3 minutes to combine the flavors. Adjust seasoning as necessary.
Cooking Vegetables
Sauté Seasonal Vegetables
In another skillet, add a little oil and sauté the seasonal vegetables for about 5-7 minutes until they are tender but still crisp.
Serving
Plate the Dish
On a plate, serve a portion of the basmati rice, top with the halibut fillet and prawns, drizzle the black bean sauce over, and arrange the sautéed vegetables on the side.
