Beef Brisket

Prepare the Brisket

Preheat your smoker to 225°F (107°C). Rub the brisket with smoked paprika, salt, black pepper, garlic powder, and onion powder. Place it in the smoker and cook for about 1.5 hours per pound.

Add Liquid Smoke

During the last hour of cooking, baste the brisket with a mixture of beef broth and liquid smoke.

Rest the Brisket

Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

Mashed Sweet Potatoes

Cook the Sweet Potatoes

Peel and chop the sweet potatoes. Boil them in salted water until tender, about 20 minutes.

Mash and Season

Drain the sweet potatoes and return them to the pot. Add butter, brown sugar, cinnamon, and salt. Mash until smooth and creamy.

Sauté Vegetables

Heat olive oil in a large skillet over medium heat. Add zucchini, yellow squash, corn, and chopped red bell pepper. Sauté for about 10 minutes until tender.

Season and Serve

Season with salt, black pepper, and fresh parsley. Stir to combine and serve warm.

Make the Gravy

In a saucepan, combine beef drippings, BBQ sauce, flour, and water. Cook over medium heat, whisking constantly until the gravy thickens.
