Saffron Rice
Bloom the saffron
Place saffron threads in a small bowl and pour 2 tablespoons hot (not boiling) water over them. Let steep 5–10 minutes to extract color and aroma.
Sweat aromatics
Heat 2 tablespoons olive oil in a wide heavy-bottomed skillet or paella pan over medium heat. Add the diced onion and cook, stirring, until translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
Toast rice & season
Add the rice to the pan and stir to coat with oil and aromatics. Cook, stirring, 2 minutes to lightly toast the grains. Add the paprika, salt, and pepper, stirring to combine.
Simmer with saffron
Pour in the vegetable broth and the saffron with its soaking liquid. Stir once to distribute evenly, then bring to a gentle boil. Reduce heat to medium-low so the liquid simmers steadily but not aggressively. Cook uncovered for 12–15 minutes, without stirring frequently, until rice is nearly tender and most liquid is absorbed.
Finish rice
When rice is nearly done (liquid mostly absorbed), gently fold in the lemon zest. Taste and adjust seasoning with additional salt or pepper if needed. Reduce heat to low and keep warm while preparing vegetables; rice will finish absorbing and develop a slight crust on bottom (socarrat) if left 3–5 minutes more.

Prepare vegetables
While the rice cooks, prepare all vegetables: julienne peppers, slice zucchini, dice eggplant, trim green beans, halve cherry tomatoes, drain artichokes and slice roasted peppers. If eggplant is very bitter, sprinkle with a pinch of salt, let sit 15 minutes, then rinse and pat dry.
Sear heartier vegetables
Heat 2 tablespoons extra-virgin olive oil in a separate large skillet over medium-high heat. Add eggplant and cook 4–5 minutes until golden and softened. Add green beans and zucchini and cook 3–4 minutes, turning occasionally, until beans are bright and zucchini is lightly browned. Remove these vegetables to a bowl and set aside.
Cook peppers and tomatoes
In the same skillet, add a touch more oil if needed, then add red and yellow bell peppers. Sauté 3–4 minutes until tender-crisp. Add cherry tomatoes and cook 1–2 minutes until they soften and release a little juice. Stir in the roasted red peppers, artichoke hearts, and peas to heat through for 1 minute.
Combine vegetables
Return the seared eggplant, green beans, and zucchini to the pan with the other vegetables. Stir to combine and season with a pinch of salt, 1/4 teaspoon black pepper, and 1/2 teaspoon smoked paprika. Remove from heat when vegetables are tender but still hold shape.
Arrange over rice
Spoon the cooked vegetables over the saffron rice in the paella pan or large serving skillet, arranging them attractively in sections or concentric rings. This helps present the classic paella look and allows some vegetables to contact the hot pan and crisp slightly.
Finish and garnish
Sprinkle chopped parsley over the paella, scatter toasted slivered almonds if using, and dust lightly with additional smoked paprika. Serve with lemon wedges on the side so diners can squeeze fresh lemon over individual portions.
Optional Finishes
For extra texture and flavor, tuck piquillo pepper strips into the top of the paella after arranging vegetables, or scatter additional roasted pepper slices. Toast slivered almonds in a dry skillet over medium heat until golden (about 2–3 minutes) and sprinkle just before serving. Add extra parsley to brighten the dish.
