Method

Soften the cream cheese: leave at room temperature for 15–20 minutes or microwave in 5–7 second bursts until scoopable but not melted.

In a medium bowl, combine softened cream cheese and finely chopped crab meat. Break up lumps with a fork until smooth and evenly mixed.

Fold in the finely chopped green onions, soy sauce, sesame oil, minced garlic (if using), salt and white pepper. Taste and adjust seasoning — mixture should be creamy, slightly savory, and a little salty to balance the wrapper and sweet sauce.

Chill the filling for 10 minutes in the fridge if it feels too soft to handle; this makes assembly easier.

Wonton wrappers & assembly

Prepare workspace: lay out wonton wrappers on a lightly dusted surface (use the tsp of flour or a clean, dry board). Place a small bowl of water nearby for sealing.

Place a heaping teaspoon (about 1 tbsp) of the crab-cream cheese filling in the center of each wonton wrapper. Do not overfill — leave space at the edges for sealing.

Brush the four edges of the wrapper lightly with water using your finger. Fold the wrapper in half to form a triangle, press out any air around the filling, and firmly seal the edges. For the classic Crab Rangoon shape, bring the two bottom corners of the triangle together, overlap slightly, and press to seal, creating a small purse. Alternatively, leave as triangles or pleat the edges. Repeat for all 8 wrappers.

Place assembled wontons on a tray lined with parchment or lightly dusted with flour and keep refrigerated if not frying immediately to help them keep their shape.

Frying

Heat oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). Use enough oil for deep frying so wontons float (about 2 cups in a small pot).

Fry in small batches (2–4 wontons depending on pot size) so oil temperature remains steady. Gently lower wontons into hot oil seam-side up with a slotted spoon or spider.

Fry for 2.5–3.5 minutes, turning once or gently agitating the pot so they brown evenly, until wrappers are golden brown and crisp. Do not overcrowd.

Remove with a slotted spoon and drain on a wire rack or paper towels for 30–60 seconds. Repeat with remaining wontons.

Serve immediately while hot and crispy.

Sweet red dipping sauce (serves 8)

If using store-bought sweet chili sauce, mix 1/2 cup of the sauce with 1 tsp rice vinegar and 1/2 tsp soy sauce to brighten and balance the sweetness. Add 1 tbsp water if you prefer a thinner consistency.

Taste and adjust: add a pinch more vinegar for tang, or a dash of soy for saltiness. Sprinkle 1/2 tsp sesame seeds on top if desired.

Transfer sauce to a small bowl for serving alongside the hot crab rangoons.
