GINGER BEER

In a medium saucepan combine 1 cup grated fresh ginger, 1 cup granulated sugar, and 2 cups water. Bring to a simmer over medium heat, stirring until sugar dissolves. Reduce heat and simmer gently for 8–10 minutes to extract ginger flavor. Remove from heat and let cool for 15 minutes.

Make ginger syrup

Using a fine-mesh sieve or cheesecloth, strain the ginger syrup into a large heatproof bowl or pitcher, pressing on solids to extract as much liquid as possible. Discard or reserve the spent ginger for another use.

Strain syrup

While the syrup is still warm (but not hot), stir in 1 cup fresh lemon juice and a pinch (1/4 tsp) of salt. Allow the mixture to cool to lukewarm (about 25–35°C / 77–95°F). Cooling ensures yeast will activate properly without being killed by high heat.

Add lemon and salt

In a small bowl, sprinkle 1 tsp active dry yeast over 2 tablespoons of warm (not hot) water and let stand 5 minutes until foamy. If it doesn't foam, the yeast may be inactive—use fresh yeast.

Activate yeast

Pour the lukewarm ginger-lemon syrup into a clean 2-liter (or larger) plastic bottle or fermentation vessel. Add the foamy yeast and 4 cups cold water. Cap the bottle loosely or fit with an airlock and gently invert several times to mix. The mixture should be at room temperature.

Combine and dilute

Leave the bottle at room temperature (20–24°C / 68–75°F) for 12–24 hours to allow the yeast to produce carbonation. Check firmness of the bottle after 12 hours by squeezing (for plastic bottles)—it should become firm as CO2 builds. Do not let pressure build for more than 24 hours to avoid overcarbonation.

Primary carbonation

Once the bottle feels firm and pleasantly carbonated, move it to the refrigerator for at least 6 hours (preferably overnight). Cooling slows the yeast and helps settle sediment.

Chill and stop fermentation

Carefully open the chilled bottle over a sink to release pressure slowly. Pour the ginger beer into glasses over ice if desired, leaving any sediment in the bottle. Garnish with mint leaves and lime slices. Serve immediately.

Serve

Keep refrigerated and consume within 5–7 days. If bottles become too firm, open briefly to release excess pressure before storing. Strain and decant into smaller bottles if you want longer chilled storage.
