Chinese Garlic Chive Dumpling Recipe

Method

Dumpling filling

    Prepare vegetables and mushrooms

    Wash Chinese garlic chives, drain, and cut into 1/4-inch pieces. Peel and finely dice the jicama into small uniform pieces (about 1/4-inch). Remove stems from shiitake mushrooms and finely dice the caps so they match the jicama size.

    Sweat aromatics and mushrooms

    Heat 1 teaspoon vegetable oil in a skillet over medium heat. Add the minced yellow onion and cook 2–3 minutes until translucent. Add the minced garlic and grated ginger and cook 30 seconds until fragrant. Add the diced shiitake mushrooms and sauté 4–5 minutes until they release moisture and begin to soften. Remove from heat and let cool slightly.

    Combine filling ingredients

    In a large bowl, add the ground pork (or chosen protein/tofu). Mix in the cooled mushroom-onion mixture, diced jicama, and chopped garlic chives. Add 1 tablespoon light soy sauce, 1 tablespoon Shaoxing wine, 1 teaspoon sesame oil, 1/2 teaspoon salt, 1/4 teaspoon white pepper and 1 teaspoon cornstarch. Stir thoroughly (folding motion) until the mixture is well combined and slightly sticky. Taste a small piece by cooking a teaspoonful in a hot skillet to adjust seasoning if needed.

    Chill filling

    Cover the filling and refrigerate 10–15 minutes to firm up slightly—this makes wrapping easier.

Assembling dumplings

    Set up an assembly station with a small bowl of water (for sealing), a stack of dumpling wrappers, and the filling bowl. Keep wrappers covered with a damp towel to prevent drying.

    Place one wrapper in your palm or on a work surface. Spoon about 1 tablespoon of filling into the center of each wrapper (adjust to wrapper size so it can be sealed without overfilling). Moisten the edge of the wrapper with water using your fingertip. Fold and pleat to seal: bring edges together, press firmly to remove air, and make 4–6 small pleats on one side to create a crescent-shaped dumpling. Repeat until all dumplings are filled (yields roughly 30–36 dumplings).

Cooking dumplings

    Pan-fry and steam (potsticker method)

    Heat a nonstick skillet over medium-high heat and add 2 tablespoons vegetable oil, swirling to coat. Place dumplings flat-side down in a single layer without overcrowding (work in batches if necessary). Fry undisturbed 2–3 minutes until bottoms are golden brown.

    Carefully pour 1/2 cup water into the skillet (watch for sputtering), cover immediately with a tight-fitting lid, and reduce heat to medium-low. Steam for 5–6 minutes, or until water has evaporated and filling is cooked through (internal temp for pork should reach 165°F / 74°C).

    Remove lid and continue cooking 1 minute to re-crisp the bottoms. Transfer dumplings to a serving plate. Keep warm and repeat with remaining dumplings.

Soy-ginger vinaigrette

    Whisk together 3 tablespoons light soy sauce, 2 tablespoons rice vinegar, 1 teaspoon grated ginger, 1 teaspoon sugar or honey, 1 teaspoon sesame oil, and 1 tablespoon neutral vegetable oil in a small bowl until sugar dissolves. Stir in thinly sliced scallions and toasted sesame seeds if using. Taste and adjust: add a little more vinegar for brightness or a pinch more sugar if too sharp.

Sriracha sauce

    Serve straight sriracha in a small ramekin. Optionally whisk together 3 tablespoons sriracha with 1 tablespoon mayonnaise for a milder, creamier dipping sauce.

To serve

    Arrange warm dumplings on a platter. Serve with the soy-ginger vinaigrette and sriracha (or sriracha mayo) on the side. Garnish with fresh cilantro leaves if desired.
