Edamame

Method

Edamame

  1. 1

    Prepare steamer

Add 1 cup of water to a medium saucepan or pot and bring it to a simmer over medium-high heat. Place a steamer basket or metal sieve so it sits above the water; ensure the water does not touch the basket.

  2. 2

    Add edamame

If using frozen edamame, no need to thaw. Add 1 cup of edamame pods to the steamer basket in a single layer so steam can circulate evenly.

  3. 3

    Steam

Cover the pot and steam the edamame for 4–6 minutes for fresh pods or 6–8 minutes for frozen, until the pods are bright green and tender when one is tested. Avoid overcooking to keep a slight bite.

  4. 4

    Drain

Carefully remove the steamer basket and transfer the edamame to a bowl or tray. Shake off excess water and let them sit briefly to stop steaming.

Seasoning

  1. 5

    Season

While the edamame are still warm, drizzle 1 teaspoon toasted sesame oil over them, sprinkle 1 tablespoon coarse sea salt (adjust to taste), and add 1 teaspoon freshly ground black pepper. Toss or shake the bowl so the seasoning coats the pods evenly.

  2. 6

    Serve

Transfer to a serving bowl and provide lemon wedges if using. Guests squeeze a wedge over the edamame if desired. To eat, squeeze the beans from the pod with your teeth — do not eat the pod.
