Ceviche Marinade & Shrimp

    Prepare shrimp

    Rinse shrimp under cold water, pat dry, and cut into 1/2-inch pieces. Place shrimp in a nonreactive bowl (glass or stainless steel).

    Marinate

    Pour the lime juice and lemon juice over the chopped shrimp so they are fully submerged. Add kosher salt and sugar, stir to combine. Cover and refrigerate for 20–30 minutes, stirring once halfway through, until shrimp turn opaque and firm (shrimp should be fully 'cooked' by the citrus). If the mixture is extremely acidic, add up to 2 tablespoons cold water to mellow the flavor.

    Prep aromatics

    While shrimp marinates, thinly slice the red onion and soak in cold water for 5 minutes to reduce bite, then drain and pat dry. Seed and finely dice the jalapeño. Mince the garlic. Roughly chop the cilantro. Dice the tomato and, if using, peel/seed and dice the cucumber.

    Combine with shrimp

    After the shrimp are opaque and firm, drain off about half of the marinade if you prefer a less soupy ceviche (reserve the liquid if you want more flavor). Add the red onion, tomato, jalapeño, garlic, cucumber (if using), and 2/3 of the chopped cilantro to the shrimp. Stir gently to combine so the vegetables are evenly distributed.

    Finish flavors

    Gently fold in the diced avocado and remaining cilantro. Drizzle the extra-virgin olive oil and add black pepper and hot sauce if using. Taste and adjust seasoning with a pinch more salt or a squeeze of lime if needed.

    Chill briefly

    Let the assembled ceviche rest in the refrigerator for 5–10 minutes to marry flavors (do not marinate longer than 2 hours once avocado is added to avoid browning).

    Serve

    Spoon the Baja Shrimp Ceviche into small bowls or onto tostadas. Serve immediately with tortilla chips or extra tostadas alongside lime wedges.
