Preheat your oven to 500°F (260°C). If using a pizza stone, place it on the middle rack to heat for at least 30 minutes. If using a baking sheet, place it in the oven to warm for 10–15 minutes.
Lightly flour a work surface with the 2 tbs flour. Stretch or roll the pizza dough into a 12-inch round (or size to fit your baking sheet/stone). Transfer the shaped dough to a piece of parchment paper for easy transfer or to a lightly oiled pizza peel.
Roasted garlic ranch sauce
Roast the garlic: Preheat oven to 400°F (if not using the main oven step) or use a small oven-safe dish in the preheating oven. Toss 6 garlic cloves with 1 tbs olive oil, wrap in foil or place in a small covered ramekin. Roast for 20–25 minutes until soft and lightly caramelized. Let cool, then squeeze the softened garlic out of the skins.
Make the sauce: In a small bowl, mash the roasted garlic into a smooth paste. Combine mashed garlic with 3 tbs prepared ranch dressing, 3 tbs Greek yogurt (or sour cream), 1 tbs mayonnaise, 1 tsp lemon juice, 1 tsp salt, and 1 tsp freshly ground black pepper. Stir until smooth and taste; adjust salt/pepper or lemon for brightness. This yields a creamy roasted garlic ranch spread — set aside.
Spread the sauce: Using about 3–4 tbs of the roasted garlic ranch, spread an even thin layer over the stretched dough, leaving the oiled rim bare. Reserve any extra sauce for dipping or a light drizzle after baking.

Prepare vegetables: Thinly slice mushrooms, green pepper, red onion, zucchini, tomatoes, and green onions. Drain and quarter marinated artichoke hearts. Slice olives if not pre-sliced. Pat any very wet ingredients (tomato slices, zucchini) lightly with paper towel to remove excess moisture to avoid a soggy pizza.
Lightly soften mushrooms and peppers (optional): For a less 'raw' texture, heat a skillet over medium with 1 tsp olive oil and sauté mushrooms and green pepper for 2–3 minutes until just softened. Cool slightly before topping. This step is optional; raw toppings will roast in the oven but pre-sautéing reduces released moisture.
Assemble vegetables: Over the ranch-coated dough, sprinkle 1 1/2 cups of shredded mozzarella evenly. Layer the mushrooms, green bell pepper, red onion slices, black olives, zucchini, and marinated artichoke quarters evenly across the surface. Distribute tomato slices sparingly (about 6–8 slices) so they don’t overly wet the pie. Scatter sliced green onions over the top (reserve a few green tips for garnish after baking).
Cheese & finishing
Add remaining cheese: Sprinkle the remaining 1/2 cup mozzarella and the 1/2 cup provolone/fontina (if using) evenly on top of the vegetables. Finish with 2 tbs grated Parmesan, 1 tsp dried oregano, and 1/2 tsp red pepper flakes for a mild kick.
Bake the pizza: Transfer the pizza (on parchment or peel) to the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway, until the crust is golden and cheese is bubbly and starting to brown. Baking time depends on oven and dough thickness—watch closely after 8 minutes.
Finish and serve: Remove pizza from oven and let rest 2–3 minutes. Brush the crust lightly with any remaining olive oil. Scatter reserved green onion tips over the pizza for freshness. Slice into 8 wedges and serve immediately with any leftover roasted garlic ranch on the side for dipping or drizzling.
