Prepare the Pork Belly
Preheat your oven to 180°C (350°F). Score the skin of the pork belly in a criss-cross pattern, then rub salt and pepper all over the meat. Place the pork belly in a roasting pan and roast for about 1 hour or until the skin is crispy.
Make the Basil Garlic-Chili Sauce
While the pork is roasting, prepare the sauce. In a blender, combine garlic, fresh basil, and fresh chili peppers. Blend until smooth. Add soy sauce and blend again. Adjust seasoning to taste.
Prepare the Chinese Broccoli
In a pot of boiling water, blanch the Chinese broccoli for 2-3 minutes until tender. Drain and set aside.
Serve
Once the pork belly is done, let it rest for 10 minutes before slicing. Serve the slices of pork belly on a plate with the blanched Chinese broccoli on the side, drizzled with the basil garlic-chili sauce.
