Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the Carolina grits and salt. Reduce the heat to low and cook, stirring occasionally, until thickened (about 20-25 minutes).

Prepare the Green Beans

While the grits are cooking, trim the ends of the green beans. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the green beans and sauté until tender (about 5-7 minutes). Season with salt and pepper to taste.

Sear the Scallops

Pat the sea scallops dry with paper towels. Season both sides with salt and black pepper. In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown and opaque in the center. Remove scallops from skillet and set aside.

Make Garlic Butter

In the same skillet, reduce heat to medium and add the remaining 1 tablespoon of butter and minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Serve

Plate the grits, top with seared scallops, drizzle with garlic butter, and serve with sautéed green beans on the side.
