Burger Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

    Form and Cook the Burger

    Form the Wagyu beef into a patty. Season with salt and pepper. Heat a grill or skillet over medium-high heat and cook the burger for about 4-5 minutes on each side for medium-rare, adding the smoked scamorza cheese on top during the last minute to melt.

    Assemble the Burger

    Toast the burger bun if desired. Spread truffle aioli on the bottom bun, place the cooked burger patty with melted cheese, top with crispy bacon, and add candied jalapenos. Cover with the top bun.

Truffle Fries Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin fries and soak them in cold water for 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep fryer or large pot to 350°F (175°C). Drain and pat the fries dry, then fry in batches until golden and crispy, about 4-5 minutes per batch.

    Season the Fries

    Remove fries from oil and drain on paper towels. Toss with truffle oil, salt, and chopped fresh parsley.
