    Prepare the Potatoes

    Peel and cut the Russet potatoes into thin fries. Rinse them in cold water to remove excess starch and pat them dry with a paper towel.

    Heat the Oil

    In a large deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of the cut fries to the hot oil. Fry in batches for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and place them on a paper towel-lined plate to drain excess oil.

    Season the Fries

    While the fries are still hot, season them with salt and black pepper to taste.

    Add Truffle Essence

    Drizzle the hot fries with truffle oil and toss them gently to coat evenly.

    Finish with Parmigiano

    Sprinkle the grated Parmigiano-Reggiano on top of the fries and toss again. If desired, garnish with chopped fresh parsley.
