Prepare the Guajillo and Espresso Crust
Soak the dried guajillo chiles in hot water for about 15 minutes until softened. Remove the stems and seeds, then blend with espresso powder, salt, and black pepper until smooth.

Prepare the Ahi Tuna
Pat the Ahi tuna steaks dry with paper towels. Rub the guajillo and espresso mixture evenly over the steaks. Let them marinate for about 10 minutes.

Roast the Bok Choy
Preheat the oven to 400°F (200°C). Cut the bok choy in half lengthwise and place it on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 15-20 minutes until tender and slightly charred.

Sear the Ahi Tuna
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the Ahi tuna steaks for about 1-2 minutes on each side for medium-rare, adjusting the time to your preference. Remove from heat and let rest.

Prepare the Burrata Sauce
In a small bowl, mix the burrata cheese with lemon juice and a pinch of salt. Whisk until creamy.

Plate the Dish
On each plate, place a bed of roasted bok choy, top with the seared Ahi tuna, and drizzle with the burrata sauce.
