Torte

Honey-Chamomile Ice Cream

Honeycomb Candy

Method

Torte

1

Prepare the Hazelnuts

Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and toast them in the oven for about 10-12 minutes or until golden brown. Let them cool, then chop finely.

2

Mix the Batter

In a large bowl, cream the unsalted butter and granulated sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

3

Combine Dry Ingredients

In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

4

Fold in Hazelnuts

Gently fold the chopped hazelnuts into the batter until evenly distributed.

5

Bake the Torte

Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool before serving.

Honey-Chamomile Ice Cream

6

Infuse the Cream

In a saucepan, combine the heavy cream, whole milk, honey, dried chamomile flowers, and a pinch of salt. Heat over medium heat until it's hot but not boiling. Remove from heat and let steep for 15 minutes.

7

Prepare Egg Mixture

In a bowl, whisk together the egg yolks. Slowly pour the warm cream mixture into the yolks, whisking constantly to prevent curdling.

8

Cook the Mixture

Return the mixture to the saucepan over low heat. Stir constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

9

Chill the Ice Cream Base

Strain the mixture to remove chamomile flowers, then let it cool. Refrigerate for at least 4 hours or overnight.

10

Churn the Ice Cream

Churn the cold mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.

Honeycomb Candy

11

Prepare the Candy Mixture

In a saucepan, combine the granulated sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves.

12

Cook to Temperature

Increase the heat and bring the mixture to a boil without stirring. Allow it to reach a temperature of 300°F (hard crack stage).

13

Add Baking Soda

Once it reaches the desired temperature, remove from heat and quickly stir in the baking soda. The mixture will foam up.

14

Cool and Break

Pour the mixture onto a greased baking sheet and allow it to cool completely. Once cool, break into pieces.
