Fermented Fries

Prepare potatoes
Wash and scrub 3 medium russet potatoes. Cut into 1/3–1/2-inch thick fries (about 3 cups by volume). Pat dry with a clean towel.

Make brine
Dissolve 2 tablespoons non-iodized salt in 1000 ml (about 4 cups) filtered water. Stir until fully dissolved.

Pack and ferment
Place the cut fries in a clean pint-sized (or similarly sized) jar, leaving about 1 inch headspace. Pour the brine over the fries so they are fully submerged. Use a fermentation weight or a small clean zip-top bag filled with some brine to keep potatoes under the brine. Seal the jar loosely (use an airlock lid or a standard lid left slightly ajar) to allow gasses to escape. Leave at room temperature (18–22°C / 65–72°F) for 24–48 hours. Check daily: you should see small bubbles and a mild tang. Ferment shorter (24 h) for a light tang, longer (48 h) for more pronounced fermentation. Do not ferment beyond 72 hours for best texture.

Rinse and dry
After fermentation, pour out the brine and rinse the fries thoroughly under cold running water to remove excess surface salt and acidic tang. Drain in a colander and spread on paper towels. Pat very dry — moisture will interfere with crisping.

Season and crisp
Option A — Frying: Heat neutral oil in a heavy pot to 175°C (350°F). Fry fries in batches 3–4 minutes until golden and crisp. Remove to a wire rack or paper towel-lined tray and immediately season with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Option B — Oven-roast: Preheat oven to 230°C (450°F). Toss fries with 1–2 tablespoons oil (from the 1 cup listed) until evenly coated. Arrange in a single layer on a rimmed baking sheet. Roast 25–35 minutes, flipping once, until deep golden and crisp. Season with salt and pepper while hot. Note: frying gives the crispiest result; roasting is a lower-oil alternative.

Finish
Transfer fries to a serving platter. If using optional spice toppings, sprinkle your choice (cool ranch powder or chili spice blend) evenly over hot fries and toss lightly so it adheres.
Truffle Dip

In a small bowl, combine 1/2 cup mayonnaise and 1/4 cup sour cream. Whisk until smooth.

Stir in 1 teaspoon truffle oil, 1 teaspoon lemon juice, 1/2 teaspoon minced garlic, and 1/4 teaspoon fine sea salt. Taste and adjust: add up to another 1/4 teaspoon salt or a drop more truffle oil if desired.

Fold in 1 tablespoon chopped fresh chives. Refrigerate at least 15 minutes to let flavors meld before serving. Bring to room temperature briefly if the fries are very hot so the dip isn't too chilled.
Optional Spice Toppings

Cool Ranch: Sprinkle up to 2 teaspoons cool ranch powder over hot fries and toss to coat. Use less if you prefer a subtle flavor. Chili Spice: Mix 2 teaspoons chili spice blend (approximately 1 tsp smoked paprika + 1/2 tsp garlic powder + 1/4–1/2 tsp cayenne, adjust heat) and sprinkle over hot fries, tossing to coat evenly.
