    Shuck oysters

    If your oysters are not already shucked, clean shells under cold water. Hold oyster flat-side up, insert a well‑sharpened oyster knife at the hinge, twist to pop, run the blade under the muscle to free oyster and retain liquor. Arrange 6 oysters on a stable tray or baking sheet rimmed with rock salt or crumpled foil to keep them level.

    Prepare butter base

    In a small bowl, combine 2 tbs softened butter, 1 tsp fresh lemon juice, 0.25 tsp kosher salt and 0.125 tsp black pepper. Mix until smooth. This will be spread thinly on each oyster shell before topping.

    Assemble oysters

    Spread about 1/3 to 1/2 tsp of the butter mixture onto each oyster meat. Spoon approximately 1 to 1.5 tbs of the warmed Spinach Rockefeller mixture (see next section) over each oyster, dividing it evenly among the 6. Sprinkle about 1/2 tsp of coarse breadcrumbs and about 1/2 tsp grated Pecorino Romano on each oyster to create a lightly crisp topping.

    Bake or broil

    Preheat oven to 425°F (220°C) with rack in the center if baking; or set broiler to high and position rack about 6 inches below. Place assembled oysters on the baking sheet and bake for 6–8 minutes until topping is bubbling and edges of breadcrumbs are golden. If using broiler, broil 2–4 minutes—watch closely so breadcrumbs and cheese brown but do not burn. Internal temp should be hot and topping set.

    Finish

    Remove oysters from the oven. Immediately grate the remaining 1 tbs Pecorino lightly over each oyster and sprinkle with the remaining 1 tbs fine dry breadcrumbs for extra texture. Serve hot with lemon wedges on the side.

Spinach Rockefeller Topping

    Sauté aromatics: In a medium skillet over medium heat, melt 1 tbs unsalted butter. Add the finely minced shallot and cook 2–3 minutes until translucent. Add the 2 minced garlic cloves and cook 30–45 seconds until fragrant but not browned.

    Cook spinach: Add the chopped 2 cups baby spinach to the skillet with the shallot/garlic and toss until it wilts (about 2–3 minutes). If needed, add 1 tbs dry white wine or broth to deglaze and help cook the leaves; simmer 30–60 seconds until liquid mostly evaporates.

    Finish mixture: Reduce heat to low and stir in 2 tbs heavy cream, 1 tbs grated Pecorino, 1 tbs chopped parsley, 0.5 tsp lemon zest and a pinch (0.125 tsp) nutmeg. Season with 0.25 tsp salt and 0.125 tsp black pepper. Cook 1–2 minutes until mixture is slightly thickened. Taste and adjust seasoning. Remove from heat and let cool slightly before portioning onto oysters.

Finishing & Garnish

    Plate and serve: Arrange the hot oysters on a serving platter over rock salt or crushed ice to stabilize. Garnish with fresh lemon wedges. Serve immediately so the cheese topping is warm and slightly crisp.

    Make-ahead & reheating note: You can prepare the spinach topping up to 1 day ahead, covered and chilled. Bring to room temperature and rewarm gently before assembling. Once oysters are assembled, they are best baked and served immediately.
