Method

Syrup

  1. 1

    Make brown sugar simple syrup

Combine 1/4 cup dark brown sugar and 1/4 cup water in a small saucepan. Place over medium-low heat and stir constantly until the sugar fully dissolves and the mixture is barely simmering (do not boil vigorously). Once the sugar is dissolved and the syrup is slightly thickened, remove from heat and let cool to room temperature. Transfer to a clean container and refrigerate until needed. Yield: roughly 3–4 tablespoons (about 0.75–1 oz) of syrup; use 1/4 oz per cocktail.

Cocktail

  1. 2

    Prepare glass and ice

Chill a rocks glass briefly by filling with ice and setting aside, or keep glass at room temperature if preferred. If using a large single ice cube, ensure the cube is ready and that the surface is dry before use.

  2. 3

    Build the drink

Discard the chilling ice from the rocks glass (if used). Add 1/4 oz (about 7–8 ml) brown sugar simple syrup to the glass, then add 3 dashes of Angostura bitters. Pour in 2 oz Maker's Mark bourbon.

  3. 4

    Stir

Add one large ice cube (or several large cubes) to the glass. Using a bar spoon, stir gently and steadily for about 20–30 seconds (roughly 15–20 full turns) until the cocktail is well chilled and slightly diluted — the glass should develop slight condensation.

  4. 5

    Garnish and serve

Express the oils from an orange peel over the drink by holding the peel skin-side down about 3–4 inches above the glass and giving it a firm snap so oils spray onto the surface. Rub the peel along the rim of the glass, then drop the twist into the drink. Add one maraschino cherry on a pick or directly into the glass. Serve immediately.
