Combine glaze ingredients

In a small bowl whisk together pineapple juice, brown sugar, soy sauce, rice vinegar, ketchup, grated ginger, minced garlic, red pepper flakes, 1 tsp salt, and 1/2 tsp black pepper until sugar begins to dissolve.

Simmer and reduce

Pour the mixture into a small saucepan over medium heat. Bring to a gentle simmer, stirring occasionally. Simmer for 6–8 minutes until the liquid reduces slightly and flavors concentrate.

Thicken glaze

Mix 1 tsp cornstarch with 1 tbsp cold water to make a slurry. Whisk the slurry into the simmering glaze and continue to cook 1–2 minutes until the sauce thickens to a glossy consistency. Remove from heat and set aside. Taste and adjust seasoning if needed.

Prep chicken

Pat the chicken thighs dry with paper towels. Trim excess fat. Season both sides with 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp garlic powder.

Sear chicken

Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add the chicken thighs, skin side (if any) or presentation side down, in a single layer. Cook without moving 4–5 minutes until well-browned, then flip and cook another 4 minutes until the second side is browned. Reduce heat to medium.

Finish with glaze

Pour about half of the prepared pineapple glaze into the skillet with the chicken, spooning some over the pieces. Reduce heat to medium-low, cover loosely, and cook 6–8 minutes more, spooning glaze occasionally, until chicken reaches an internal temperature of 165°F (74°C). If the glaze gets too thick or sticky, add a tablespoon of water to loosen.

Optional broil for caramelization

For extra caramelized finish, transfer the glazed chicken to a foil-lined baking sheet, brush with remaining glaze, and broil 2–3 minutes 4–6 inches from the element until edges darken slightly. Watch closely to avoid burning.

Garnish & Serve

Slice or leave thighs whole. Spoon any pan juices and remaining glaze over the chicken. Sprinkle with toasted sesame seeds and sliced green onions. Serve with optional fresh pineapple chunks on the side and pair with steamed rice or vegetables.
