Method
Red Sangria Preparation
Prepare fruit and dissolve sugar
In a large pitcher (about 2.5–3 quart capacity), combine the thinly sliced orange, lemon, and apple with the fresh berries and the 3 tablespoons granulated sugar. Stir gently and let sit 5–10 minutes so sugar begins to dissolve and fruit releases juices.
Build the sangria
Add the 1.5 liters dry red wine, 1/8 cup orange liqueur, 1/4 cup brandy, 1/2 cup freshly squeezed orange juice, and 1/4 cup lemon juice to the pitcher. Stir thoroughly to combine. Add the 2 cinnamon sticks and gently press down on the fruit with the back of a spoon to release more flavor (do not mash).
Chill and marry flavors
Cover the pitcher and refrigerate at least 4 hours and up to 24 hours. For best flavor, refrigerate overnight to allow fruit and spices to infuse the wine. Taste after chilling and adjust sweetness with an additional 1 tablespoon sugar or 1–2 tablespoons simple syrup if desired.
Finish and serve
When ready to serve, add 3 cups chilled club soda or sparkling water to the pitcher and stir gently to combine. Fill glasses with about 1 cup ice each (adjust to preference). Pour sangria with fruit into glasses, making sure each glass gets fruit pieces. Garnish each glass with a mint sprig if using.
White Sangria Preparation
Prepare fruit
In a separate large pitcher, combine the thinly sliced peaches, sliced green apple, and grapes. Add the basil or mint leaves and lightly bruise the herbs with a spoon to release aroma.
Build the white sangria
To the pitcher add 1.5 liters dry white wine, 1/8 cup peach schnapps, 1/8 cup elderflower liqueur (or simple syrup), and 1/4 cup freshly squeezed lime juice. Stir to combine, then refrigerate covered for at least 3 hours, preferably 4–8 hours so the fruit infuses the wine.
Adjust and chill
After chilling, taste and adjust sweetness by adding a little more elderflower liqueur or 1–2 tablespoons simple syrup if needed. Keep chilled until just before serving.
Finish and serve
Just before serving, stir in 3 cups chilled prosecco or sparkling wine to add effervescence. Fill glasses with ice (about 1 cup per glass). Pour the white sangria into glasses, ensuring fruit is distributed. Garnish with lemon or lime wheels and additional basil or mint leaves if desired.
Notes & Make-Ahead
Both sangrias can be prepared a day ahead (without the sparkling components). Keep covered and refrigerated; add the club soda or prosecco at serving time to preserve bubble and freshness. If you prefer a sweeter sangria, adjust sugar or liqueur amounts to taste. For a boozy variation, increase brandy or schnapps by up to 2 tablespoons.
